Today I’m sharing a recipe for a quick and easy – and family favorite – Christmas cookie! We call these treats Chinese New Year cookies, but always make them around Christmastime. These take less than 10 minutes to prep and make about 2-3 dozen. Great to whip up for last minute get togethers and cookie exchanges.
16 oz La Choy chow mein noodles
12 oz unsalted peanuts
1 bag butterscotch chips
1 bag milk chocolate chips
Put chow mein noodles and peanuts into a bowl. In the microwave or on the stove top, melt the butterscotch and chocolate chips together until smooth. Pour melted chocolate over dry ingredients and stir to coat evenly with the chocolate. Then place in drops on a pan covered with wax paper or tin foil. Place in freezer for a couple hours to harden and store in a container in the fridge to keep firm.
